Nutella-Filled Coffee Truffles

Ingredients Checklist

  • 250 ml heavy cream
  • 85 ml condensed milk
  • 50 g icing sugar
  • 1 cup strong brewed coffee
  • 1 tablespoon freeze-dried coffee
  • Nutella, to taste
  • Dark chocolate, as needed

Follow These Steps

1. Prepare the Coffee Mixture

Start by brewing a strong cup of coffee. Dissolve the freeze-dried coffee into the brewed coffee to intensify the flavor, then set this mixture aside to cool.

2. Melt and Line with Chocolate

Melt the dark chocolate in a bain-marie (double boiler) until smooth. Once fully melted, carefully line your silicone hemisphere molds with the chocolate. Use a spoon or brush to ensure an even coating. Place the molds in the refrigerator and let the chocolate harden completely.

Tip: Ensure that the chocolate layer is thick enough to hold the filling without breaking when unmolded.

3. Whip the Coffee Cream Filling

In a large bowl, whip the cream and icing sugar together until soft peaks form. Gradually add the condensed milk and the cooled coffee mixture (brewed coffee with freeze-dried coffee) and whip until you achieve a thick, smooth, and stable coffee cream.

4. Assemble the Truffles

Take the chocolate-lined molds out of the refrigerator. Fill each mold halfway with the coffee cream filling. Then, add a generous spoonful of Nutella to the center of each truffle. Top the Nutella layer with more coffee cream, leaving a small gap at the top for the final chocolate layer.

5. Seal with Chocolate

Melt a bit more dark chocolate and pour it over the filled molds to seal the truffles. Use a spatula or the back of a spoon to smooth the tops and ensure they are fully covered with chocolate.

6. Freeze and Serve

Place the assembled truffles in the freezer for at least a couple of hours or until fully set. When you’re ready to enjoy them, remove from the molds and serve immediately.

Tip: For the best texture, let the truffles sit at room temperature for a few minutes before eating.

Troubleshooting Tips

  • Chocolate not releasing from molds: Ensure the molds are fully chilled before removing the truffles. If you’re still having trouble, gently twist the silicone molds to help release them.
  • Runny cream filling: Be sure the coffee mixture is fully cooled before incorporating it into the cream to avoid a runny texture. Whip the filling long enough to ensure it is thick and stable.

Storage Suggestions

  • Refrigeration: Store the truffles in an airtight container in the fridge for up to a week.
  • Freezer: These truffles can be kept in the freezer for up to 2 months. Let them thaw at room temperature for 10–15 minutes before serving.

A Special Treat for Coffee Lovers
