Eight slices of pure autumn comfort, requiring exactly zero minutes in the oven—this is the magic of these vegan no-bake pumpkin cheesecake bars. If you’re anything like me, the moment the air turns crisp, you start craving all things pumpkin spice, but sometimes the thought of baking feels like one more thing on a very long list.
That’s where these creamy, spiced, utterly decadent bars come to the rescue.
They capture everything I love about fall in a single, chilled dessert: the deep warmth of pumpkin spice, the rich tang of vegan cream cheese, and the cozy sweetness of granola butter. The speculoos and espresso crust adds a sophisticated, cookie-like base that’s impossible to resist.
It’s the kind of treat I’d bring to a Thanksgiving potluck or make for a cozy movie night in, knowing it will disappear almost as quickly as I made it.
I have a soft spot for no-bake desserts, especially when they look this elegant. The smooth, pale orange filling topped with a glossy, melted granola butter drizzle feels special, yet it comes together with a blender and a bit of patience in the fridge.

It reminds me of simpler times in the kitchen, where the joy was in the assembly and the anticipation of that first perfect bite.
What Makes This Vegan Pumpkin Cheesecake So Creamy?
The secret to that impossibly smooth, rich filling lies in using high-quality, block-style vegan cream cheese and vegan margarine at room temperature. Tub margarine often contains more water, which can prevent the bars from setting firmly.
Blending the filling until it’s completely lump-free is key—you want a velvety base that holds its shape beautifully when sliced. The addition of a little vegan Greek-style yogurt or sour cream adds a lovely tang that balances the sweetness perfectly.
The Best Things to Serve with Pumpkin Cheesecake Bars
While these bars are a complete showstopper on their own, they play wonderfully with a few simple accompaniments. A strong cup of coffee or a chai latte brings out the espresso notes in the crust and the warm spices in the filling.
For a truly decadent dessert plate, serve a chilled bar with a dollop of coconut whipped cream and an extra sprinkle of crushed speculoos biscuits for crunch. They’re also a fantastic partner to a scoop of vegan vanilla ice cream, especially if you’re serving them slightly softer at a gathering.
How to Get Perfect, Clean Slices Every Time
After that patient overnight chill (trust me, it’s worth the wait!), the real trick to beautiful slices is all in the knife. Run a sharp, thin knife under very hot water and wipe it dry before making each cut.

For the granola butter topping, press the knife straight down through the glaze first to avoid dragging it, then continue through the creamy filling and crust. This method gives you those gorgeous, bakery-case-worthy edges.

Can I Make These Bars Ahead of Time?
Absolutely! This is one of their best features.
They need at least 5 hours to set, so making them the night before you need them is ideal. Once assembled with the topping, they keep beautifully in the fridge, covered, for up to 5 days.
You can also freeze the un-topped, set cheesecake layer for up to a month. Just thaw it overnight in the fridge, add your melted granola butter topping and garnish, and no one will ever know it wasn’t made that day.

Tips for Making Your Own Pumpkin Spice Blend
If you don’t have a pre-made pumpkin spice blend, you can easily mix your own! For this recipe’s tablespoon of spice, combine 1½ teaspoons of ground cinnamon, ½ teaspoon of ground ginger, and ¼ teaspoon each of ground allspice and ground cloves.
This homemade mix will make your kitchen smell incredible. And if you’re riding the pumpkin wave all season long, you’ll definitely want to try these Mini Vegan Pumpkin Cheesecakes for a bite-sized variation.
Storing Your No-Bake Cheesecake Bars
Keep any leftovers tightly covered in the refrigerator for up to five days. The granola butter topping may soften slightly over time, but the flavor only gets better.
For longer storage, you can freeze the individual slices on a baking sheet until firm, then wrap each one in plastic wrap and place them in a freezer bag. They’ll keep for a month.
To serve, simply let them thaw in the refrigerator for a few hours. If you’re exploring more no-bake wonders, our No-Bake Oreo Ice Cream Cake is another crowd-pleaser that’s worth a look.

Instructions
Prepare the Pan
- Line the base and sides of a 9-inch loaf pan with parchment paper, leaving some overhang for easy lifting later.
Make the Crust
- Add 20 speculoos biscuits, 1 teaspoon instant espresso powder, and 0.5 teaspoon sea salt to a food processor and blitz until finely ground.
- Add 50 grams vegan margarine and blend until the mixture sticks together when pressed between fingers.
- Press the crumb mixture firmly and evenly into the base of the pan, then refrigerate while making the filling.
Make the Filling
- Add 400 grams vegan cream cheese, 150 grams pumpkin purée, 100 grams vegan margarine, 30 grams vegan yogurt, 50 grams granola butter, 40 grams brown sugar, 1 tablespoon pumpkin spice blend, and 1 teaspoon vanilla extract to a high-speed blender and blitz until completely smooth and creamy.
Assemble and Chill
- Pour the filling over the chilled crust, smooth the top, and refrigerate for a minimum of 5 hours or overnight until fully set.
- Melt 200 grams granola butter over a double boiler, stirring until it reaches a spreadable, pourable consistency, then pour over the set cheesecake and tilt the pan to cover the entire surface.
- Garnish immediately with whole and crushed speculoos biscuits while the topping is still soft.
- Refrigerate for another 30 minutes to 1 hour to fully set the topping before slicing.
- Run a sharp knife through the topping first, then cut through the cheesecake for clean slices, and store covered in the fridge for up to 5 days.
Notes
- Use block-style vegan butter or margarine, not tub margarine, as tub margarine has too much water and may prevent the bars from setting properly.
- If no pumpkin spice blend is on hand, mix your own: 1.5 teaspoons ground cinnamon, 0.5 teaspoons ground ginger, 0.25 teaspoons allspice, and 0.25 teaspoons ground cloves.
- Espresso powder is optional; skip it if you prefer a milder flavor.
- These bars freeze well for up to a month when wrapped tightly; defrost overnight in the fridge before serving.
